Tasting Notes
A medium-bodied dry red wine with earthy aromas, hedgerow fruits, and black cherry. The palate shows ripe blackberry and black pepper flavours held together with good tannic structure.
Winemaker’s Notes
Fruit was fermented at 24c with pump-overs thrice daily. Yeast strains were selected to accentuate black fruit and spice characters. Full MLF in tank and micro-oxygenation were used to increase suppleness.

The dark black berry fruit character is a perfect foil to the creamy, savoury/sour notes in Goat’s cheese. This brings a balance to both the wine and cheese, for our Head Winemaker this combination is a complete match.
