A mild, semi-soft cheese with a mellow blue flavour and a slightly salty finish. The blue green veins deepen as the cheese matures, and the taste of the blue strengthens. It has an attractive natural edible rind and has won numerous awards including a Super Gold at the World Cheese Awards 2017-2018.
Sussex Slipcote is a fresh soft cheese made with organic sheep milk. It has a light, creamy, fluffy texture and a slightly sharp refreshing flavour. Packed in small 100g “buttons” or 500g “logs”, it is also available flavoured with Garlic & Herb, Cracked Black Peppercorn or Dill.
Sister Sarah is a semi-soft goats’ milk cheese. It is matured for just 8-12 weeks. The cheese is very white because the goats digest all the carotene in the grass. It is a mild cheese, with a light and delicious flavour and without any of the ‘goatiness’ which is often associated with a goat cheese. The cheese is coated in annatto (a south American berry) to create the orange colour.
Duddleswell is a hard cheddar-style cheese. Our organic version is made with organic sheep milk and then matured for over five months, Duddleswell has a well-rounded, rich flavour; slightly sweet and nutty. Also available traditionally smoked over oak shavings at the dairy, giving the cheese a deliciously light smokiness.
Brother Michael is an organic, semi-soft rind-washed cheese. Based on our Saint Giles, the ‘washing’ process gives the cheese a beautiful sticky pink rind and a sweet, pungent aroma, which is much stronger than the flavour of the cheese.
